Long Life Recipe: Courgette Flan


Ingredients for 4 servings

  • 300 g organic courgettes
  • 150 g egg white
  • 100 ml milk
  • 70 g Parmesan cheese
  • 30 g shallot
  • 2 tablespoons of extra virgin olive oil
  • salt and pepper to taste


Aluminium containers

Chop the shallot and brown it in a pan with a tablespoon of extra virgin olive oil. Peel the courgettes, slice them into think rounds and add them to the pan. Sweat them over a medium heat, stirring occasionally. 

Remove the pan from the heat and season with salt and pepper. 

When the courgettes have cooled, put them in a high-sided bowl. Then add the milk, the egg whites and the Parmesan cheese and mix using a stick blender, until creamy and smooth. 

Pour the mixture into the aluminium containers after oiling them and cook it in a water bath in the oven for 35 minutes at 140°C.

Remove the flan from the container and serve it with a julienne of sautéed courgettes. 

Decorate it with a parsley leaf and a drizzle of oil.
